Problem: Unable to read PDF doc when it's saved in My Documents. Strange coding. Using the different text encoding isn't helping. I have to save it to Desktop and open it there. Only then can I read it. Doesn't matter who the source of PDF is. Does someone have solution?

What kind of error are you getting while trying to open the PDF in Adobe Reader or Foxit ?
Post a screenshot if possible or a link to your PDF file.

Not able to send the PDFs. Proprietary info from clients. It happens, though, with all PDF files. When I save them in Word, and I open them, I get a dialog box w/the following info:
Select the encoding that makes your doc readable. Text encoding: (options are) Windows default or Ms-Dos or Other encoding (with a long list of options). None of these work.
If I save the PDF to Desktop, I'm able to read the PDFs.
